Chimichurri sauce

I just can’t have my steak without this Argentine condiment

Chimichurri is a pesto-like sauce. You can use it to accompany steak and other meats.

To make the sauce you will need:

  • 2 garlic cloves
  • bunch of parsley – roughly chopped
  • 1/2 teaspoons of dried oregano
  • 1 shallot – chopped
  • 1/2 teaspoon of chilli flakes
  • 2 tablespoons of olive oil
  • juice of 1/2 a lemon
  • 2 tablespoons of red wine vinegar

You will also ideally need a blender/food processor but you can chop all the ingredients finely by hand and mix it together.

Blitz the parsley, oregano, garlic, shallot and chilli flakes in blender.

Then add the olive oil, the lemon juice, vinegar and some seasoning (a good twist of cracked black pepper and a sprinkle of maldon salt is my preference), then pulse to combine everything into a saucy consistency.

Then spoon onto your meat of choice. This would also go nicely on cooked large field mushrooms for a vegan alternative.
